(Serves 4) This recipe adds a bit of spice to Geoduck that is served sashimi-style. Satay sauce is sometimes labeled Barbecue Sauce in Asian stores. The Bull Head Brand from Taiwan is Stephen Wong’s personal favourite. Adjust the spiciness of the sauce to your own taste by starting with half of the hot bean sauce then add more if desired. Slices of ripe plum tomatoes or cherry tomatoes can be added for colour and contrast. Just arrange them around the spinach and drizzle with a bit of the dressing.

To make Sesame Spinach: In a large saucepan of boiling salted water, blanch spinach for about 1 minute or until leaves are just wilted. Drain and rinse under cold water until spinach is thoroughly cooled. Drain well and wrap spinach in clean, dry towel. Squeeze to remove excess moisture. Place spinach in medium bowl, sprinkle on sesame oil and salt and toss to mix. Set aside until ready to use. Sprinkle with sesame seeds for garnish just before serving.
To make dipping sauce: In a small saucepan over medium heat, combine shallots, garlic, satay and hot bean sauce and cook for 30 seconds. Add wine and cook for 1 minute. Add soya sauce, stock and sugar and cook for 2 minutes. Adjust with sugar to taste. Transfer mixture to a blender and process until liquefied. Cool.
To plate: Place a portion of Sesame Spinach in the centre of each plate. Arrange 6 Geoduck slices around the spinach. Drizzle some sauce on the Geoduck and garnish with a sprinkling of green onions. Serve a bit of the sauce on the side as a dipping sauce if desired.
